Emma Provolone Piccante (Extra Aged) 17-18 lb 1/4 wheel.  A semi-firm cheese made from pasteurized cow's milk & aged for 40-60 days.  Exceptionally aromatic, accompanied by a sweet & unique flavor.  The rustic appearance on the outside, smooth semi-hard interior produces a dense, mild flavor with some tartness.  This cheese is made in the Trentino region of  Italy.
